Born into the Maori culture with thousands of years of hangi making experience, I have made, or helped to make hundreds of traditional hangi's over my own lifetime.
With the knowledge and insights I have gained from this vast experience, I have fine tuned a system of cooking hangi above the ground, that I believe is equal to, if not superior, than cooking hangi below the ground.
Cooked in it's own juices with that unique smoky taste of manuka wood and earthy taste Hell of a Hangi has the extra benefit of being free of the possibility of poisoning from toxic soils that are prevalent in many urban regions.
